June 21st is the official start of summer. As the thermometer rises, nothing beats a refreshing summer snack. Our friends at Breadroot came up with a recipe that checks all of the boxes for those summertime hankerings. Check out this delicious corn salsa.
Corn Salsa Recipe
2 cans corn (or fresh corn if in season)
1 can black beans
1 sweet onion
1 container grape tomatoes
1/2 bunch cilantro
1/2 bottle Italian dressing (see homemade recipe option)
1/2 teaspoon salt
1/2 teaspoon pepper
Drain corn and beans and combine in a bowl. Dice one onion and add to the corn and bean mixture. Cut all tomatoes in half and add. Dice the avocado, and chop the cilantro, add to mixture. Season with salt and pepper, adjust as desired. Finish with Italian dressing. Best served after chilled for 1 hour.
Italian Dressing Recipe
lemon juice and white wine vinegar
fresh parsley, dried oregano, and thyme
extra-virgin olive oil
sea salt & black pepper
Add the olive oil, vinegar, lemon juice, garlic, honey, herbs, salt, and pepper to a small bowl, and whisk to combine. Alternatively, place the ingredients in a Mason jar with a tight-fitting lid, and shake until the dressing is emulsified. Season to taste, and enjoy!
